ROHAPECT® MPE 2.0 is a fungal enzyme preparation, consisting of a concentrated pectin methyl esterase. The product contains no other pectolytic side activities. It can be used in general for the modification of pectins in plant material thus effecting properties such as viscosity, firmness or gelation. And it can be used in a number of industrial applications where a targeted pectin modification is key.
