Bromelain is a group of thiol hydrolyzing proteases extracted and refined from pineapple plants of the genus Pineapple by bioengineering technology. Its molecular weight is 33,000 and its isoelectric point is 9.55. Bromelain mainly comes from plant stems, so it is also called stem bromelain. The main component of bromelain is a thiol-containing protease, which also contains peroxidase, acid phosphatase, several protein inhibitors and organic active calcium. Its active center is thiol (-SH), which can hydrolyze various proteins and perform biochemical reactions. It can be widely used in food, medicine and biology industries. Product features: 1.
