For bread manufacturers, Ulrick & Short has launched two starches that not only increase shelf life, but also enhance the height and softness of the loaf with no detriment to taste or texture.

Just a 2% inclusion of Synergie Melody and Synergie Superdust within a standard white loaf commercial recipe will provide up to a days additional shelf life with additional springiness maintained to at least the best before date.

Even when emulsifiers are reduced, the inclusion is still fully effective, thus giving bread manufacturers the opportunity to improve their product and clean up their labelling as these two new starches are wheat based.
