The organizer is the National Association for the Specialty Food Trade. Founded in 1952, the association is a non-profit commercial and trade association, which is composed of producers, importers, wholesalers, retailers, restaurants, public catering owners and other professionals in the professional food industry at home and abroad. Today, the association has more than 3,200 member companies in the United States and overseas, with more than 180,000 product categories and annual sales of more than $62 billion.

The exhibition, which was first held in 1955 and has a history of more than 60 years, is the most extensive and leading exhibition of products in the American specialty food industry. It showcases a variety of global specialty foods, foods and beverages, including traditional, natural and organic varieties.

The biannual winter fair, held in January in San Francisco on the west coast, and the summer fair in June in New York on the east coast, is the largest specialty food and beverage trade show in the United States. Each exhibition can attract about 19,000-32,000 people from specialty food, wine, department stores, supermarkets, restaurants, mail order and other related industries to attend, among whom 87% are decision-makers or people who can influence the purchase decisions of enterprises. At the exhibition, buyers can see up to 50,000 kinds of specialty foods from all over the world.
