Sorbic acid and Potassium sorbate are two of the few preservatives allowed by the Additives Committee of the World Health Organization, which has high safety and strong inhibition ability against mold.

Sorbic acid and Potassium sorbate have three major advantages of antisepsis, safety and stability. They are used in food. They are recognized as "GRAS" by the United States Food and Drug Administration and are two of the commonly used preservatives abroad. With the  improvement of people's living standards and attention to their health, and with the forward development of food engineering technology, the development and application of green,  natural, safe and efficient functional food preservatives will become a hot trend, and it has become an inevitable trend to eventually replace benzoate in China.
