Following the consolidation of its Taste, Nutrition & Health (TN&H) segment earlier this year, Symrise has reorganized its food and beverages offer within the business arm.

Existing under TN&H, the German flavor house’s Food & Beverage division now brings together its taste specialties with the natural ingredients’ expertise of Diana Food and the capabilities of IDF in protein and natural chicken ingredients.

Within TN&H, the Symrise Food & Beverage Division joint portfolio serves a broad variety of application areas, such as culinary products, beverages, snacks, dairy and sweet products, baby food and consumer health solutions.

This includes its Code of Nature platform, with a broad portfolio of natural raw materials ranging from vanilla extracts to vegetable juice concentrates, fruit powders and The new Food & Beverage Division serves a broad variety of application areas, including culinary products, beverages and consumer health solutions.flakes, chicken broth and pieces, as well as natural flavoring options.

“Our solutions help improve the nutritional profile of consumer products by adding functional ingredients, such as classic proteins, and fibers,” says Regine Lueghausen, Food & Beverage VP global marketing, at Symrise.

“We also support manufacturers in removing less desirable ingredients like sugar, sodium or fat, while making these good-for-you products taste great.”

Swathe of flavor palates
Consumers are increasingly asking for “good-for-you” products. This demand continues to see robust expression across global food markets.

Symrise’s revamped F&B division offers key tonalities such as chicken, beef, vegetables (onion, carrot, mushroom, etc.), fruit – including a unique palette of citrus materials for beverage and sweet applications as well as bananas meeting the high standards of baby food – vanilla and other botanicals.

Furthermore, dairy and brown notes also form a key part of the portfolio, while taste balancing solutions help optimize the overall taste for products.

“Consumers are taking greater responsibility for their health than ever before. Their demand for efficacy and naturalness continues to drive innovation, as does the spotlight on holistic well-being,” comments Nathalie Richer, global health business leader of Symrise Food & Beverage, Naturals.

The new division also provides effective standardized active compounds allowing the development of health-specific supplements, as well as flavor and masking solutions for pharmaceuticals and OTC medicines.

“Acerola as a natural source of vitamin C, cranberries for urinary health, as well as wild blueberries associated with cognitive health benefits belong to the consumer health offering to the dietary supplements and functional foods market,” says Richer.

Incubating new food concepts
TN&H also formed a Business Incubation Group that brings together “new, potentially game-changing” ideas and solutions for the future of foods and beverages.

“This internal incubation structure accelerates present developments and lays the groundwork for the future,” details the company.

“It also puts the circular economy for major raw material sources into the center of its activities. TN&H identifies by-products and side-streams potentials in and for its supply chain.”

Over this last year, Symrise has invested in scaling up its innovation pipeline. In February, the flavor house developed ProtiScan, a system which analyzes and characterizes diverse protein sources to help customers balance off-notes and achieve the optimal flavor release.

The platform links this knowledge about plant-based proteins – ranging from sensory to consumer-driven data – with the technical properties of the protein sources.

Among other developments, Symrise Food & Beverage recently created a Naturals business unit to centralize its natural ingredients expertise. The business unit’s expertise includes agronomy, risk management, full stream valorization as well as gentle processing techniques.

Business highlights
Last month, Symrise unveiled its financial data for Q3, revealing a “much stronger than expected” organic growth across sections driven by its taste, nutrition and health segment, which has benefited from strong out-of-home consumption that led to increased demand for beverage and savory products.

Symrise has reported growth in all regions, the company previously explained to FoodIngredientsFirst how it is exploring shifts in taste across broad geographies and age groups.

Symrise targets to increase sales by 5% to 7% CAGR until 2025, despite macroeconomic volatility.

Disruption of supply chains and the availability of raw materials have significantly impacted the procurement markets. Leading to price increases for raw materials, some of which are significant.
