First supermarket sales for pullet eggs

Waitrose has become the first supermarket in the UK to begin selling pullet eggs as part of a new initiative to help cut down on food waste.

Pullet eggs are smaller eggs produced by hens at around 18 weeks old. Because of their flavour, colour and texture, these eggs are often used by top chefs and fine dining restaurants.

They haven’t been easy for consumers to get hold of, however. This is because they fall outside of the size regulations set by supermarkets, so millions are wasted as a result.

But by offering Pullet eggs commercially, Waitrose said it is supporting famers and reducing food waste.

Zoe Simons, Development Chef at Waitrose & Partners, says: “Pullet eggs are a chef’s dream especially when it comes to pastry. Thanks to their smaller nature they hold their shape a lot better which makes them idea for poaching. The yolks have a wonderful deep colour and rich flavour, making them perfect for mayonnaise or pastry such as a lemon tart or creme brûlée.”

The pullet eggs will retail in a four-pack at £1.99.
