Tea polyphenols are a class of polyhydroxy compounds found in plants of the Theaceae family. They are the general term for polyphenolic substances in tea, abbreviated as TP. The main chemical components are catechins (flavanols), flavonoids and flavonols, phenolic acids and phenolic acids, polymeric phenols, etc. Among them, catechins are the main components of tea polyphenols, accounting for 65% to 80% of the total amount of tea polyphenols. Catechin compounds mainly include four substances: epicatechin (EC), epigallocatechin gallate (EGC), epicatechin gallate (ECG), and epigallocatechin gallate (EGCG).
