I. Introduction to Astaxanthin
Astaxanthin is a keto-type carotenoid, presenting as purple-red crystals or powder. It has an extremely strong antioxidant capacity, with its antioxidant activity being 550 to 1,000 times that of vitamin E and 6,000 times that of vitamin C. It is insoluble in water but readily soluble in organic solvents and oils, and thus is often used in products in a lipophilic form.
